The Southside FFA’s BBQ Team, the Cardinal Cookers competed at the National High School BBQ National Championship at the TSTC Campis in Hutto, Texas on June 19th, 2023. With 50 plus teams competing the Cardinal Cookers placed 6th place in the Steak Taco division with the Wagyu Steak cooked by Nikko Garcia. The whole team worked together throughout with Samantha Clark making her delicious S’mores cake in the Dutch oven division, Dacee Vela cooking the pork chops, Maverick Vela pulling double duty preparing his chicken as well as the boneless pork butt for the 6th division just for nationals and Zach Ramos cooking his ribs as well as preparing his specialty dish for the secret ingredient competition which was chunk bolagna which he made bologna ceviche.
